I love Spanish food, its approach to fresh and quality ingredients that make a simple dish delicious.

I grew up in Spain but have been living in the UK for the past 5 years. My family is from Valencia and Basque Country although I grew up in Madrid.

I learned how to cook from my dad, he taught me everything about fish and paella, having patience in the kitchen and appreciating the simple things in life.

Growing up, my parents and I took trips around the country, and my love for all the different regions’ food grew.

I like to cook with organic and locally sourced vegetables where possible and work to find the best sustainably caught fish.

As a chef it is my responsibility to source my ingredients in a way that helps local farmers and fishermen.

I don’t cook with meat or poultry as I believe it’s unsustainable; indeed I’ve added vegan options for most of the dishes on my menus.

I’m happy to work with the customers to create the perfect menu, working around allergies or intolerances.
