I love Spanish food, its approach to fresh and quality ingredients that make a simple dish delicious. I like to cook with organic and locally sourced vegetables where possible, and work to find the best sustainably caught fish. I believe as a chef it is my responsibility to source my ingredients in a way that helps local farmers and fishermen. I don’t cook with meat or poultry as I believe it’s unsustainable and have vegan options for most of the dishes on the menu, and am happy to work with the customers to create the perfect menu, working around allergies or intolerances.
